Turkey Tacos with Mango Pico de Gallo

Turkey Tacos:

1 Butterball Easy Fresh Turkey Breast2 cloves garlic pressed1 Tbsp. olive oil1 Tbsp. fresh lime juice1 tsp ground cumin1 tsp chili powder1 tsp paprikaSalt and pepper, to taste8 small corn tortillas

Mango Pico de Gallo:

1/2 cup tomato, finely chopped1/3 cup mango, finely chopped1/3 cup onion, finely chopped1/4 cup cilantro, finely chopped1 jalapeño deseeded, finely chopped2 cloves garlic, pressed2 Tbsp. fresh lime juiceSalt and pepper, to taste

Directions

  1. Add turkey, garlic, olive oil, lime and spices to a large bowl or zip-seal bag. Place in fridge and let marinate for at least 15-30 minutes or up to 24 hours.

  2. Remove turkey from marinade. Place turkey on a grill or pan heated to medium-high heat. Let turkey cook for about 6-7 minutes per side or until the internal temperature reaches 165⁰F.
  3. Place your cooked turkey breast on a plate or cutting board. Cut the breast into little cubes.
  4. Combine chopped tomato, mango, onion, cilantro, jalapeno, garlic and lime juice in a small bowl. Char tortillas on the stovetop over the flame until lightly charred.
  5. Assemble tacos to your liking (should make about 8 small tacos). Top turkey with a few tablespoons of Pico de Gallo.
