Preheat oven or grill to 325°F
- Cook roast for 2.5 hours, then remove and rest for 10 minutes.
- Slice into 1" steaks. Cook on a medium/high grill or frying pan for 4-5 minutes per side to achieve golden brown grill marks, then set aside.
- While turkey steaks rest, combine the shallot, parsley, cilantro, mint, oregano, red wine vinegar, olive oil, and garlic in a mixing bowl. Season with salt and pepper to taste.
- Spoon on to the steaks and serve with grilled potatoes and salad!
