Turkey Pot Pie

1 roasted boneless skinless turkey breast, or 1 lb of roasted turkey1 cup turkey gravyYour favourite pie crust recipe½ cup onions, diced½ cup celery½ cup carrot, diced½ cup leek, diced½ cup corn½ cup butter½ cup flour1 tsp thyme1 tsp sage½ tsp back pepper1 Tbsp. kosher salt1 egg mixed with 1 Tbsp. water


  1. Preheat oven to 400°F.

  2. Melt butter in a large sauté pan over medium heat.
  3. Sauté all vegetables for 6-8 minutes, until translucent. Add thyme, sage, pepper and salt.
  4. Stir for 2-3 minutes, until moisture has released from the vegetables.
  5. Add flour and stir for 2-3 minutes, until thickened.
  6. Add gravy and let cool for 15-30 minutes.
  7. Add turkey to vegetable and gravy mixture
  8. Using a 10-inch pie pan, roll out bottom dough.
  9. Fill with turkey mixture.
  10. Cover with top pie dough.
  11. Cover with eggwash.
  12. Bake at 400°F for 35 minutes or until golden brown.
