Turkey Pasta Salad

Serves 4


 Select the items you need and print a shopping list.
1 lb leftover Butterball roasted turkey, cut into ½ inch cubesSalt & Pepper1 lb pasta of your choice¼ cup mayonnaise¼ cup olive oil2 Tbsp apple cider vinegar1 Tbsp Dijon mustard¼ cup shaved celery¼ cup finely diced red onions½ cup cherry tomatoes¼ cup finely diced red peppers½ cup feta cheese¼ cup sliced cucumbersCelery leaves for garnish


  1. Fill a large pot with water, adding a pinch of salt and bring to a boil. Add pasta and cook according to instructions on the box.

  2. While pasta cooks, combine mayonnaise, oil, vinegar, Dijon, onions and turkey in a large mixing bowl.
  3. Drain cooked pasta and add to the large bowl with the turkey mixture. Combine and let cool.
  4. Add celery, red onions, tomatoes, red peppers and ¼ cup feta cheese and toss thoroughly.
  5. Season with salt and pepper, garnish with sliced cucumbers, the remaining feta cheese and celery leaves. Enjoy!
