Turkey Grain Bowl

Prep time 15 Minutes       Cook time 30 Minutes       Serves 4 People

Ingredients

Turkey

2 Tbsp. olive oil2 tsp garlic powderSalt, to tastePepper, to taste2 cups cooked farro or other whole grains1 5oz (142g) box arugulaFresh vegetables: radishes, snap peas, avocado, cooked asparagus, red onion, and any other vegetables you have on-hand

Lemon dressing:

1/3 cup olive oil1/4 cup fresh lemon juice (juice of one lemon)1 clove garlic, minced finely1 tsp Dijon mustard2 tsp honeySalt, to tastePepper, to taste

Directions

    If using Easy Fresh turkey breast:

  1. Preheat oven to 350⁰F.

  2. Place turkey breast in a shallow pan, and sprinkle with salt, pepper, and garlic powder.
  3. Roast at 350⁰F for around 30 minutes, or until internal temperature reaches 165°F (74°C).
  4. While turkey is roasting, prepare dressing by whisking all dressing ingredients together in a small bowl.

  5. Assemble the grain bowls:

  6. Place farro and arugula together in a large bowl.

  7. Pour 1/2 the lemon dressing over farro and arugula, and toss to coat.
  8. Divide dressed farro and arugula between 4 bowls, and garnish with vegetables.
  9. Slice turkey breast and place on top of bowls.
  10. Serve with remaining dressing and a grind of freshly ground black pepper.
  11. If you’re batch-cooking or not eating the entire recipe at once, keep farro and arugula undressed until it’s served.
