TROPICAL TURKEY BURGERS WITH GRILLED PINEAPPLE

Prep time 15 Minutes       Cook time 20 minutes       Serves 6 People

Ingredients

 Select the items you need and print a shopping list.
6 Butterball Turkey Burgers6 potato rolls (or Burger buns)6 slices smoked gouda cheese1/2 bunch kale, trimmed off stems6 slices pancetta1 Pineapple, cored and cut into 1/2 inch slices1/4 tsp chili flake2 limes, for zesting1 Tbsp. adobo (from a can of Chipotles)1/2 cup mayo

Directions

  1. Preheat grill on high.

  2. Add some oil to pineapple slices and grill for 1-2 minutes.
  3. Remove slices from grill top with some chili flake and fresh lime zest, then set aside.
  4. Grease grill with oil and cook pancetta for 5-7 minutes, flipping periodically, until crisp.
  5. Char kale by coating in olive oil, then place it on the grill for 1 -2 minutes, or until wilted and the edges have browned.
  6. Reduce heat to medium. Place burger patties on the grill, make sure to cook from frozen.
  7. Grill burger patties for 7-8 minutes, then flip. Cook for an additional 7 minutes or until internal temperature reaches 165 degrees.
  8. Add gouda slices on top for last 1-2 minutes of cooking, then remove patties from grill.
  9. In a separate bowl, combine adobo and mayo, along with a pinch of salt to taste to make chipotle mayo.

  10. Build your burgers by adding some chipotle mayo to bottom and top parts of the bun.

  11. Add turkey burgers covered in gouda, then top with a grilled slice of pineapple, charred kale, and crispy pancetta!
