Sweet and Sour Apricot Turkey

1 Butterball Easy Fresh boneless turkey breast, cut into 1-inch cubes2 Tbsp. olive oil 1/2 cup broth3 Tbsp. sesame seeds

Apricot glaze:

1/2 cup low-sugar apricot jam2 Tbsp. rice wine vinegar 2 Tbsp. soy sauce1 Tbsp. olive oil  1 Tbsp. white miso paste1 tsp sesame oil  1/2 tsp sriracha sauce5 apricots, halved 

Directions

  1. Begin by making the apricot glaze. Combine jam, vinegar, soy, olive oil, miso, sesame oil, and sriracha in a bowl and set aside. 

  2. In a greased grill pan over medium-low heat, add apricots cut side down. Grill for 2 minutes, then flip and grill for another 2–3 minutes while spooning on about ¼ cup of the apricot glaze.  Remove and set aside. 
  3. To cook Butterball turkey breast, heat olive oil in a large saucepan over medium-high heat. 
  4. Add turkey breast and season with salt and pepper.  Sear turkey on all sides for 2–3 minutes. Add stock and about 1/2 cup of apricot glaze.  Bring to a gentle boil, then reduce to simmer. Allow to reduce and cook for 8–10 minutes. 
  5. Transfer turkey and pan sauce to a serving platter and garnish with grilled apricots.  Sprinkle on sesame seeds and serve with brown rice and steamed green beans.  Enjoy!
