Combine 1 cup hoisin sauce with garlic powder, ginger powder, chili flakes, sesame oil, maple syrup and red wine vinegar. Marinate bone-in turkey breast for minimum 2 hours, up to overnight.
- Preheat oven to 375°F.
- Remove turkey from marinade and roast for approximately 45 minutes, or until reaching an internal temperature of 165°F. Remove from oven and finely slice.
- Heat large steamer over a medium-high heat. Steam the buns for 10 - 15 minutes. Once puffed up, remove from steamer and fill with sliced turkey, carrots, apple, onions, and scallion. Top with Japanese mayo and additional hoisin.
