Directions
Heat turkey bacon in a medium-sized pan. Roughly crumble and set aside.
- Using the same pan as the bacon, drizzle oil over the peaches and grill. Add honey. Cook for 10 minutes over high heat or until the peaches are nicely grilled*.
- Combine all the ingredients for the vinaigrette in a bowl. Adjust the seasoning as needed.
- In a salad bowl or serving dish, place the spinach on the bottom, then add the peaches, bacon and walnuts.
*You can use the BBQ to grill the peaches to perfection.
