Pulled Turkey Sandwiches with Apple and Celery Slaw

Ingredients

1 package Butterball Easy Fresh Bone-in Turkey Thighs1 Tbsp paprika¼ cup brown sugar1 Tbsp mustard powder1 Tbsp onion powder2 cups canned tomatoes1 tsp + ¼ tsp saltBlack pepper, to taste¼ cup soy sauce1 cup red onion, diced4 celery stalks2 large apples½ cup celery, diced¼ tsp celery seed1 Tbsp apple cider vinegar3 Tbsp Greek yogurt4 burger buns

Directions

  1. Preheat slow cooker to high-heat setting.

  2. Combine paprika, brown sugar, mustard powder, onion powder, 1 teaspoon of salt, and a pinch of black pepper in a small bowl to create a rub.
  3. Pat down turkey thighs with a paper towel, and use rub to cover both sides of the turkey.
  4. Add turkey thighs, canned tomatoes, soy sauce, onion and celery to the slow cooker, and cook on high for one hour (covered).
  5. 5. Using a pair of tongs, remove thigh bones from the slow cooker and discard. Using a fork, pull/shred turkey meat. Remove slow cooker cover, and let simmer and reduce for 20 minutes.
  6. Combine shredded apples and diced celery together in a bowl. Mix in celery seed, ¼ teaspoon of salt, apple cider vinegar and Greek yogurt.
  7. Slice your favourite burger bun, and top with pulled turkey and slaw. Enjoy!
