One Pan Turkey Hash

Ingredients

 Select the items you need and print a shopping list.
1 lb of leftover turkey (or more)13-16 small potatoes, roasted2 stalks of celery, diced2 carrots, roasted and diced2 small red onions, diced1 green pepper, diced½ cup frozen corn1 Tbsp. butter1 Tbsp. salt2 Tbsps. oil6 eggs

Directions

  1. Preheat large skillet on medium-high for 5 minutes.

  2. Drizzle oil on skillet and sauté onions until translucent.
  3. Add celery and sauté for 3 minutes until softened.
  4. Add potatoes and carefully smash.
  5. Add carrots and peppers. Sauté for 4-5 minutes.
  6. Add corn and sautée for 4-5 minutes while tossing all the vegetables together.
  7. Add leftover turkey and heat through for 4-5 minutes.
  8. Add butter and season with salt.
  9. Top with your favourite egg preparation!
