One-Pan Mediterranean Turkey Breast

Ingredients

1 Butterball Easy Fresh boneless skinless turkey breast4 Tbsps. olive oil, divided1-pint cherry tomatoes1 - 798 mL can diced tomatoes5 tsp drained capers1/2 cup pitted olives, chopped (kalamata or green in brine work best)3-4 cloves garlic, mincedSalt to taste

Directions

  1. Preheat oven to 375 °F.

  2. On stovetop, heat 2 tablespoons of olive oil in a heavy ovenproof pan.
  3. Add turkey breast and cook on medium-high for around 3 minutes per side, until browned.
  4. Remove turkey from pan and set aside.
  5. Heat 2 tablespoons of olive oil on medium heat in the same pan.
  6. Add garlic and saute for around 1 minute.
  7. Add tomatoes, olives, and capers, and place turkey breast back into the pan.
  8. Place pan in oven and cook until turkey reaches an internal temperature of 165°F (around 30 minutes).
