Migas with Bacon Style Turkey

Ingredients

12 strips Butterball ® Bacon Style Turkey, crumbled2 tbsp. butter½ cup diced yellow onion1 cup diced red and green bell peppers8 eggs, slightly beaten2 tsp. chili powder2 cups combined shredded Monterey Jack and Cheddar cheeses2 cups slightly broken tortilla chipsSalt and pepper, to taste1 jar salsa

Directions

  1. Melt butter in large skillet on medium-high heat. Cook and stir onions and peppers 4 to 6 minutes or until lightly browned.

  2. Reduce heat; add eggs and chili powder.
  3. Scramble eggs until large clumps start to form.
  4. Add the cheese and bacon; cook until cheese is melted.
  5. Fold in the tortilla chips. Salt and pepper to taste.
  6. Serve with salsa.
