Lemongrass Turkey Breast

Ingredients

1 Easy Fresh Boneless/Skinless Turkey Breast3 limes (2 juiced, 1 cut into wedges for serving)1 Tbsp. maple syrup¼ cup olive oil½ Tbsp. salt1 tsp pepper5 garlic cloves2 Tbsp. lemongrass puree1 bunch green onion6-8 cilantro sprigs

Directions

    For Marinade:

  1. Juice 2 limes. Combine lime juice with maple syrup, oil, salt, pepper, garlic, lemongrass, half the green onions and half the cilantro with a hand blender or food processor.

  2. Cut remaining green onions into slices, and reserve with remaining cilantro and lime wedge.

  3. For Turkey Breast:

  4. Cut turkey breast into 2-inch cubes. Place turkey in a covered bowl or container using only half the marinade. Cover and refrigerate the other half. Refrigerate turkey marinade for minimum 2 hours, and for as long as overnight.

  5. Preheat BBQ to medium heat.
  6. Grill turkey breast on each side for 8 minutes. Once flipped, baste with 1/2 the remaining marinade. Cook turkey breast until internal temperature reaches 165˚F/74˚C.
  7. Remove turkey breast from grill and add to a bowl. Toss in remaining marinade, and garnish with the reserved lime wedges, sliced green onions and cilantro sprigs. Serve immediately with rice or salad.
