For Turley:

1 Butterball turkey, thawed if frozen1/2 cup unsalted butter, softened1 tsp cayenne pepper1 tsp garlic powder1 tsp onion powder1 tsp paprika1 ½ tsp kosher salt½ tsp black pepper

For the Hot Honey Butter Glaze:

1/2 cup honey2 Tbsp unsalted butter1/2 tsp cayenne pepper¼ tsp kosher salt

Directions

  1. Preheat your oven to 325°F. Adjust the rack to the lower third position.

  2. In a bowl, mix the softened butter, cayenne pepper, garlic powder, onion powder, paprika, salt, and black pepper.
  3. Pat the turkey dry with paper towels. Loosen the skin from the turkey breast and spread a generous amount of the seasoned butter under the skin and on the outside of the turkey. Place turkey breast-side-up on an oiled rack inside a roasting pan. Roast at 325°F for the correct amount of time according to the Turkey Calculator.
  4. During the last 30 minutes of roasting, prepare the glaze. In a saucepan, combine honey, butter, cayenne and salt. Heat over low heat until the mixture is well combined and slightly thickened. Remove the foil and continue to roast the turkey, uncovered until the temperature reads 165°F/74°C in the breast and 180°F/82°C in the thigh.
  5. Remove the turkey from the oven and brush generously with the hot honey butter glaze. It makes for a great dipping sauce too! Let it rest for about 20-30 minutes before carving. This allows the juices to redistribute throughout the meat. Enjoy!
