Grilled Summer Cobb Salad

Prep time 20 Minutes       Cook time 15 Minutes       Serves 4 People

Ingredients

 Select the items you need and print a shopping list.
1 Butterball Easy Fresh boneless skinless turkey breast6 strips Butterball turkey bacon4 peachesHalloumi cheese1 artisan bread, sliced1 green zucchini2 avocados2 ears corn2 beefsteak tomatoes2 heads romaine lettuce1 cup extra virgin olive oil3 Tbsp. red wine vinegar1 Tbsp. brown sugar1 Tbsp. dijon mustardSalt and pepper

Directions

  1. Preheat BBQ to 450° F.

  2. To prepare dressing, mix olive oil with vinegar, brown sugar, dijon and a pinch of salt and pepper.
  3. Cut all vegetables in half, and remove any pits or seeds as necessary.
  4. Drizzle dressing on the inside (where you cut) of all the vegetables in order to season them and on turkey breast.
  5. Grill turkey breast for 8 minutes on each side, or until an internal thermometer reads 165° F.
  6. Grill romaine lettuce for 30 seconds, or until dark char marks are present.
  7. Grill vegetables cut side down for up to 5 minutes, or once again until char marks are present.
  8. Slice halloumi cheese and sourdough bread in 4, and grill until golden brown.
  9. Grill turkey bacon directly on the BBQ, for 3 minutes on each side or until golden brown.
  10. Slice turkey breast and bacon to arrange the platter
  11. Put remaining dressing in a bowl to add to your plate and build your own salad.
