grilled Habanero Turkey Scallopini

For the Turkey Marinade

1 package, Butterball Easy Fresh Turkey Scallopini1 Tbsp. olive oil1/2 habanero, seeded and finely chopped1 tsp. cumin1 tsp. smoked paprika,Juice of 1/2 limeSalt, to taste

For the Salsa

1/2 pineapple, peeled, cored, and finely cubed1/2 pomegranate, seeded1/2 cup, chopped coriander1/2 habanero, seeded and finely choppedJuice of 1 limeSalt, to taste


  1. Combine all ingredients for turkey and allow to marinate for 15 minutes to 24 hours. Heat a grill on medium-high and cook turkey for 4-5 minutes on each side until slightly charred and cooked through to the middle. Internal temperature should be 165°F/74°C

  2. Combine all ingredients for salsa in a bowl.

  3. To plate, lay grilled turkey on a platter and top with salsa to garnish. Serve with wedges of lime on the side. Enjoy!
