Crispy Plantain Turkey Tenders with Hot Honey

Ingredients

1lb Butterball boneless Turkey breast, cut into 8-10 tenders2 cups plantain chips1 cup sesame seeds1 cup all purpose flour2 eggs, scrambled

Hot honey:

1/4 cup honey1 1/2 tsp apple cider vinegar1/4 tsp paprika1/8 tsp cayenne1/4 tsp garlic powder1/4 tsp parsley

Directions

  1. Preheat oven to 400°F.

  2. Slice Butterball boneless turkey breast into 8-10 even tenders.
  3. Place plantain chips into a food processor and pulse to form very fine crumbs. Transfer the plantain crumbs to a mixing bowl and combine evenly with the sesame seeds.
  4. In two separate bowls, place the flour and eggs (with a splash of water). Dip each tender into the flour, followed by the egg and finally into the plantain sesame mixture to coat. Place each coated turkey tender onto a lined baking sheet.
  5. Bake for 20 minutes, or until crispy and the internal temperature reaches 165˚F/74˚C.
  6. While the tenders bake, mix the honey, vinegar, paprika, cayenne, garlic powder, and parsley together in bowl. Serve the crispy tenders with the hot honey on the side and enjoy!
