Broccoli and turkey bacon mini quiche

3 slices Butterball Applewood Turkey bacon1 tsp. of olive oil1/2 small onion4 eggs1/2 cup milk1 cup broccoli (steamed)Pinch of salt and pepper1 cup mozzarella cheese1/2 cup Parmesan cheese, gratedcilantro (optional)


  1. Preheat oven to 375 degrees

  2. Heat oil in a pan over medium heat and sauté onions until they begin to become translucent. Add bacon and sauté until cooked.
  3. In a large mixing bowl, whisk together eggs, milk, steamed broccoli, salt, and pepper until frothy. Stir in the turkey mixture and cheese. Add cilantro if you desire.
  4. Pour mixture into pre-made tart shells (don't judge - this was easier for the girls than making the crust themselves). Bake for 20 minutes or until the egg is cooked through and becomes fluffy. You can also do these without crust using a lightly sprayed muffin tray.
