Grilled Half Buffalo Turkey with Blue Cheese sauce

1 Seasoned Half Turkey1 cup hot sauce1 cup butter, melted1 cup blue cheese, crumbled1 cup buttermilk1 celery stalk, julienned1 carrot, julienned1 cup blue cheese, crumbled1 cup buttermilkSalt and pepper to taste


  1. Mix hot sauce and melted butter together.

  2. Wrap 2 bricks in foil. *
  3. Sprinkle Butterball Half Turkey with salt and pepper.
  4. Place Turkey on grill skin side down on med/high heat. Place wrapped bricks on top of Half Turkey. Keep eye on half turkey so skin crisps, but doesn’t burn.
  5. Turn Turkey, while replacing bricks on top periodically to avoid burning but ensure cooked through.
  6. Cook over medium to high heat until meat thermometer reads 165°F (74°C) approximately for approximately 45 minutes.
  7. Baste the meat with buffalo sauce during the last 10 minutes of cooking.
  8. Mix crumbled blue cheese and buttermilk together.
  9. Serve cooked Butterball Half Turkey with julienned celery and carrots with blue cheese sauce on the side.

  10. *Bricks are optional as Butterball Half Turkey is already flattened.
