Select the items you need and print a shopping list.
Preheat oven to 400°F (204°C). Rub half of the enchilada sauce on the turkey.
- In a 9x13 inch baking dish, mix together enchilada sauce, broth, refried beans, black beans, rice and cheese.
- Place turkey on top, cover and bake for 1 hour.
- Shred the turkey using two forks into the dish removing the bone, and place in a bowl to serve.
- Top with a dollop of sour cream and cilantro.
