Baked Turkey Enchilada Rice Casserole

Ingredients

 Select the items you need and print a shopping list.
1 lb Butterball bone in thigh1 cup enchilada sauce1 cup vegetable broth1 cup refried beans1 can black beans, rinsed and drained1 cup shredded mozzarella and cheddar blend1 cup dry basmati rice½ cup Sour CreamGarnish: ¼ cup fresh cilantro (optional)

Directions

  1. Preheat oven to 400°F (204°C). Rub half of the enchilada sauce on the turkey.

  2. In a 9x13 inch baking dish, mix together enchilada sauce, broth, refried beans, black beans, rice and cheese.
  3. Place turkey on top, cover and bake for 1 hour.
  4. Shred the turkey using two forks into the dish removing the bone, and place in a bowl to serve.
  5. Top with a dollop of sour cream and cilantro.
