Turkey Parmesan Schnitzel

Ingredients

1 lb Butterball Seasoned Boneless White and Dark Turkey, cooked and cut into 1 cm thick slices1 cup Italian seasoned breadcrumbs½ cup flour3 eggs, beaten½ cup grated Mozzarella cheese½ cup grated baby Parmesan cheese2 Tbsp. butter2 Tbsp. canola oil1 cup pasta sauceGarnish with fresh parsley

Directions

  1. Place breadcrumbs, flour and eggs into three separate bowls.

  2. Dip turkey slices into the eggs, flour, eggs again and then into the breadcrumbs. Set aside. Repeat until all of the turkey slices have been coated.
  3. In a small bowl, mix together mozzarella and Parmesan cheese.
  4. Heat butter and oil in a large non-stick skillet over medium-high heat, reserve half of butter/oil mixture for later use.
  5. Place breaded turkey slices in pan and cook for one minute on each side, or until the outside is brown and crispy.
  6. On each schnitzel, place 2 tablespoons of pasta sauce and 2 tablespoons of cheese mixture.
  7. Cover non-stick skillet and allow cheese to melt, around 1 minute. Repeat steps for the last 4 schnitzels; replenish butter/oil mixture in a pan as needed.
  8. Tip: Serve with a side of pasta and a salad for a balanced meal, or serve Turkey Parmesan Schnitzel on a toasted, crusty bun for a meal on the go.
