Turkey Gyro

For Turkey Marinade

4 Butterball Easy Fresh bone-in, turkey thighs1/3 cup olive oil1 1/2 cups Greek yogurt4 garlic cloves, minced1/3 cup chopped fresh oregano1 tsp saltJuice and zest of one whole lemon

For Tzatziki

1 1/2 cups full-fat plain Greek yogurt2 garlic cloves, minced1/2 English cucumber, chopped1/4 cup each chopped fresh dill and fresh mintJuice of 1/2 lemonSalt to taste

For Wrap

4-5 pitas1/2 English cucumber, chopped1 1/2 cups cherry tomatoes, chopped


  1. Place all ingredients for the marinade in a zip-top bag and squish around to ensure turkey thighs are coated.

  2. Marinate overnight.
  3. Preheat BBQ to medium heat.
  4. Place turkey thighs in a cast iron pan.
  5. Place cast iron pan on BBQ and roast, with the BBQ top down. Grill on both sides for 40 minutes or until internal temperature reaches 165°F .
  6. Remove pan from BBQ and shred turkey meat with two forks.
  7. In a separate bowl, add all ingredients for Tzatziki and mix well.
  8. Serve turkey on pita with tzatziki, chopped cucumber and cherry tomatoes.
