Turkey Bacon Potato Salad

Serves 4-6

8 slices Butterball Turkey Bacon1 1lb new potatoes, halved and grilled1 1/2 cups spinach2 corn on the cob, grilled and cut off the cob1/2 bunch scallion, finely sliced1/2 cup parmesan cheese, freshly grated1 Tbsp grainy mustard1 Tbsp honey2 Tbsp lemon juice


  1. In a large bowl, whisk together the mustard, honey, lemon juice, and olive oil. Season with salt and pepper to taste. Set aside.

  2. Preheat greased grill to medium high. Add the Butterball Turkey Bacon and grill for 2-3 minutes per side, or until crispy and golden. Remove from the grill and coarsely chop.
  3. Add the grilled potatoes and Turkey bacon to the bowl with the dressing, add spinach, corn, and scallion. Toss in the dressing, then transfer to your serving platter.
  4. Top with some of the freshly grated cheese and enjoy!
