Turkey Bacon Eggs Benedict

Ingredients

 Select the items you need and print a shopping list.
8 eggs1 bunch spinach1 tsp butter8 strips Butterball Applewood Smoked Turkey Bacon Rashers4 English muffins, sliced and toastedSeason to tasteFor the Hollandaise sauce:¼ c Dijon1 tbsp1 splash of Tabasco3 Burnbrae Farms Naturegg Nestlaid Omega 3 egg yolks½ tsp orange zest½ c melted butter

Directions

  1. Place egg yolks, Tabasco, lemon juice, orange zest and Dijon in blender or food processor. Turn on high.

  2. Slowly stream in melted butter. Set aside until ready to use.
  3. Sauté spinach in butter.
  4. Brown turkey bacon slices.
  5. Toast English muffins.
  6. To assemble, top English muffins with spinach, turkey bacon, poached egg and hollandaise sauce.
  7. Serve immediately.
