Turkey Apricot Salad Sandwiches

Prep time 10 Minutes       Serves 4 People


 Select the items you need and print a shopping list.
3 cups leftover Butterball turkey, cubed1/4 cup mayonnaise, Greek yogurt, or a combination of the two3/4 teaspoon dry mustard powder or any bottled mustard10 dried apricots, chopped2 sprigs fresh tarragon or 1/4 teaspoon dried2 sprigs fresh thyme or 1/4 teaspoon driedFreshly ground black pepper to taste4 pieces of freshly toasted bread (for open-faced sandwiches)


  1. Toss all ingredients together in a bowl.

  2. Serve on crusty bread.
