Thai Turkey Stir-Fry

Prep time 10 minutes       Cook time 8 minutes       Serves 4


 Select the items you need and print a shopping list.
1 lb cooked Butterball Seasoned Boneless White and Dark Turkey, cut into strips2 cloves garlic, minced1 Tbsp. grated ginger1 ½ cups sliced onion1 ½ cups sliced red pepper¼ cup red curry paste1 can coconut milk1 cup snow peas½ cup fresh cilantro½ cup crushed unsalted peanuts4 lime wedges


  1. In a large non-stick skillet over medium-high heat, cook garlic, ginger, onions, red pepper and red curry paste for one minute.

  2. Stir in turkey until well coated.
  3. Pour coconut milk over top, continue cooking for another 3 minutes or until heated.
  4. Stir in snow peas and cook for 1 minute.
  5. Serve 1 cup of the stir-fry over 1 cup of cooked basmati rice.
  6. Garnish with 2 tablespoons each of cilantro and peanuts.
  7. Squeeze lime over top and enjoy.
