Spring Strawberry and Turkey Ham Salad

Butterball turkey ham, cubed into 1/2-inch pieces4 cups baby spinach, washed1 head radicchio, chopped1 cup strawberries, washed and quarteredPinch of salt3/4 cup gorgonzola cheese1/4 cup pistachios, finely chopped

Balsamic Vinaigrette:

2 Tbsp. balsamic vinegar1 tsp Dijon1 tsp maple syrup1/4 cup olive oilA pinch of salt


  1. Begin by making the balsamic vinaigrette. Whisk together vinegar, Dijon, maple syrup, and olive oil until well emulsified. Season with pinch of salt, then set aside.

  2. In a large mixing bowl, combine cubed Butterball turkey ham, spinach, radicchio, and strawberries. Season with pinch of salt, then spoon on dressing. Toss gently, then transfer to a serving platter.
  3. Top with torn pieces of gorgonzola cheese, then sprinkle finely chopped pistachios.
