Soy Sauce Turkey

Ingredients

1 package Butterball Easy Fresh bone-in turkey thighs, deboned and cut into even sized 1-inch cubes¼ cup oil, have more handy as neededSalt and fresh ground pepper, to season20 garlic cloves, unpeeled5 king oyster mushrooms, sliced on a bias 1 cm thick20 white button mushrooms, sliced in half with stems removed½ cup red wine½ cup cilantro, roughly chopped

Sauce

½ cup dark mushroom soy sauce3 tsp. brown sugar½ cup water½ cup chicken stock

Directions

  1. In a bowl, combine dark mushroom soy sauce, sugar, water and stock. Stir well until sugar dissolves.

  3. In a pot or pan, add oil and turn heat to medium-high. Season turkey with salt and pepper. Brown turkey pieces for about 3-4 minutes per side. Add unpeeled garlic cloves and mushrooms and stir.

  4. Add red wine and let cook for 3 minutes.
  5. Add sauce and let simmer for 15 minutes with the lid off.
  6. Turn off heat and put the lid on for 15 minutes, allowing turkey to absorb all flavours without overcooking.
  7. Remove lid. Serve in bowls and garnish with cilantro.
