Healthy Mother’s Day Benny with Butterball Turkey Ham

1 Whole wheat English muffin, toasted2 Eggs, poached100g Butterball Extra Lean Turkey ham, sliced1/3 Cup cooked spinach1 Egg yolk1 Whole egg1/2 Lemon juicedPinch of paprikaSalt and pepper, to taste


  1. In a greased grill pan, heat your Butterball Extra Lean Turkey ham over medium heat for 2-3 minutes per side or until warmed through. Set aside.

  2. Make your 'sabayon' by whisking the yolk, egg, and lemon juice in a large bowl over a double boiler. Whisk constantly until thickened and doubled in volume, about 6-8 minutes.
  3. Season with salt and pepper to taste.
  4. Assemble by placing the cooked spinach on top of your toasted whole wheat English muffin.
  5. Top with the grilled Turkey ham, followed by the poached eggs, then lastly with the sabayon.
  6. Garnish with a pinch of paprika and serve with a side of fruit and hot coffee.
