Directions
In a greased grill pan, heat your Butterball Extra Lean Turkey ham over medium heat for 2-3 minutes per side or until warmed through. Set aside.
- Make your 'sabayon' by whisking the yolk, egg, and lemon juice in a large bowl over a double boiler. Whisk constantly until thickened and doubled in volume, about 6-8 minutes.
- Season with salt and pepper to taste.
- Assemble by placing the cooked spinach on top of your toasted whole wheat English muffin.
- Top with the grilled Turkey ham, followed by the poached eggs, then lastly with the sabayon.
- Garnish with a pinch of paprika and serve with a side of fruit and hot coffee.
