Grilled Turkey and Pineapple Tostadas

Ingredients

For dry rub:

1 Butterball Easy Fresh boneless skinless turkey breast1 tsp. paprika1 tsp. cayenne¼ tsp. cinnamon1 tsp. salt1 tsp. cooking oil

For Pineapple Tostada:

1 pineapple, cored and sliced2 avocados1 lemon, juiced1 white onion, finely diced1 bunch cilantro, finely chopped8 tostadas4 limes, for squeezingSalt, to taste

Directions

  1. Mix dry rub ingredients in a bowl. Rub turkey breast with dry rub ingredients. Put cooking oil onto a paper towel and rub down grill. Pre-heat one side of the grill to high, while keeping other side of the grill completely off.

  2. Sear turkey on the well-oiled grill on high heat for 2 minutes per side, then transfer to other side of the grill that is off. Close grill and allow turkey to cook for about 25 minutes, or until internal temperature reaches 165°F/74°C.

  3. Remove turkey from grill and allow to rest at least 10 minutes. Then, chop the turkey breast into ½ inch pieces.

  4. Turn grill down to medium heat. Grill pineapple slices for 3–4 minutes per side on medium heat until nicely caramelized. Remove, roughly chop, then set aside.

  5. Whip avocado and lemon juice together with a pinch of salt. Dollop avocado on the bottom of each tostada. Top with some turkey, pineapple, onion, and cilantro.

  6. Garnish with freshly squeezed lime and enjoy!
