Goat Cheese & Olive Tapenade Stuffed Turkey Breast

1 Butterball Easy Fresh boneless skinless turkey breast2 Tbsp. goat cheese¼ cup spinach, wilted2 Tbsp. roasted red pepper, diced fine2 Tbsp. olive tapenade1 Tbsp. olive oil1 Tbsp. butter8 asparagus stalks, trimmedSalt and pepper

Directions

  1. Preheat oven to 400°F.

  2. Slice each turkey breast horizontal, halfway through; beginning at the thickest end of the breast.
  3. Place 1 tablespoon of goat cheese, 2 tablespoons wilted spinach, 1 tablespoon red pepper and 1 tablespoon olive tapenade in opening.
  4. Fold top of turkey back over to seal. Repeat with second turkey breast.
  5. Heat frying pan to medium-high heat. Add olive oil. Sear each stuffed breast until golden, for about 2-4 minutes.
  6. Place on parchment-lined baking tray.
  7. Season with salt and pepper, then place in oven to bake for 30 minutes.
  8. Cook until internal temperature of the turkey reaches 165°F (74°C).
  9. Remove from heat and slice turkey breast into 1 ½ inch thick pieces
  10. Cook asparagus by heating a frying pan on high. Add butter to pan and let heat. Once hot, add asparagus and cook until tender crisp. About 5-7 minutes.
  11. Serve turkey alongside asparagus.
