Ginger Maple Turkey Breast with Roasted Sweet Potato & Chickpeas

Ingredients

2 pkg Butterball Easy Fresh boneless skinless turkey breasts (about 2 lbs.)2 red peppers3 sweet potatoes1 can chickpeas, drained and rinsed2 bunches scallionOlive oil

Spice rub:

1 tsp. salt1 tsp. garlic powder1 tsp. onion powder½ tsp. ginger powder2 tsp. turmeric½ tsp. baking soda

Glaze

¼ cup maple syrup1/8 cup soy sauce1 tsp. ginger, finely minced1 garlic clove, finely minced¼ tsp. chili flake1 Tbsp. sesame oil

Directions

  1. Preheat oven to 400°F.

  2. Peel and cut sweet potatoes into ½ inch pieces.
  3. Chop red peppers into ½ inch pieces.
  4. Add the vegetables to a parchment lined sheet pan along with scallions and drained chickpeas. Season with salt and a drizzle of olive oil. Toss to evenly to coat all the vegetables. Place a wire rack on top of the vegetables. Set aside.
  5. Mix spices in a small bowl. Rub onto turkey breasts, and place onto wire rack above the vegetables. Roast for 25 minutes.
  6. Make glaze. Combine all glaze ingredients into a small bowl and mix well. After 25 minutes, brush turkey breasts with glaze and place back into the oven. Bake for another 15 minutes.
