Crispy Turkey Sandwich

2 Butterball Easy Fresh boneless skinless turkey breasts1 cup All-Purpose flour2 eggs3 cups, flaked corn cereal

Napa Cabbage Slaw:

1 head Napa cabbage1 red onion1 red chili pepper1/2 cup yogurt1/3 cup lemon juice3 Tbsps. olive oilSalt and pepper to taste6 burger bunsHot sauce, for dashing

Directions

  1. Start by portioning turkey breast. Cut off skinny end of the breast (into a piece that's about 4 inches long), then cut the remaining thicker portion horizontally to create 3 even portions. Repeat again with second turkey breast. Whisk eggs. Then, place cereal in a large plastic bag and crush until nice and fine. Set up a standard breading station, with three bowls: one with flour, one with egg, then lastly one with crushed cereal.

  2. Preheat oven to 425°F. Dip each piece of turkey in flour (shaking off any excess). Transfer to egg, then place in bowl with crushed cereal. Coat each piece of turkey evenly, then transfer to a parchment-lined baking sheet. Repeat for each piece, then sprinkle with some olive oil and a dash of salt. Place in oven for 25 minutes, or until the internal temperature reaches 165°F and the exterior is golden and crispy.

  3. Napa Cabbage Slaw

  4. While turkey bakes, make your slaw. Finely slice cabbage, onion, and chili pepper. Place in a bowl, then mix with yogurt, lemon juice, olive oil, and salt and pepper to taste. Set aside.

  5. When turkey is done, place in your bun, then top with healthy and creamy slaw. Add a dash of hot sauce and enjoy!
