Cheesy Turkey Pasta Bake

Ingredients

 Select the items you need and print a shopping list.
2 cups Butterball Turkey, cooked and chopped3 cups penne pasta, uncooked1 Tbsp. olive oil1½ cups onion, chopped2 cups mushrooms, sliced4 garlic cloves, minced1 (680g) can diced tomatoes, undrained½ cup sun-dried tomatoes1 tsp. dried oregano1 tsp. dried basil½ cup mozzarella cheese, shredded½ cup white cheddar cheese, shredded½ cup Parmesan cheese, grated1 cup coarse dry breadcrumbs¼ cup fresh chives

Directions

  1. Heat oven to 375°F.

  2. In large pot, cook pasta as directed on the package.
  3. While pasta is cooking, in large skillet, heat oil over medium-high heat. Add onion, mushrooms and garlic. Cook for 5 minutes or until onion is softened, stirring occasionally.
  4. Add canned tomatoes, sundried tomatoes, basil and oregano and stir until combined. Cook, uncovered for 10-15 minutes, stirring occasionally.
  5. Stir chopped turkey and cooked penne pasta with the tomato sauce.
  6. Spray casserole dish with cooking spray. Pour pasta mixture into a casserole dish.
  7. In a separate bowl, combine cheeses and breadcrumbs. Sprinkle over pasta. Bake, uncovered, 30 to 40 minutes or until cheese is golden brown.
  8. Garnish with fresh chives before serving.
