BBQ Turkey Pizza

For pizza:

1 1/2 cups shredded or chopped leftover BBQ Butterball Boneless Turkey Breast roast1LB prepared pizza dough⅔ cup BBQ sauce (homemade or store bought)8 oz fresh mozzarella½ cup sliced red onionOlive oil for brushingFresh basil or cilantro for serving, optional

For BBQ sauce:

½ cup ketchup½ cup brown sugar¼ cup soy sauce6 cloves garlic, minced½ tsp smoked paprika¼ tsp cayenne pepper¼ tsp kosher salt

Directions

  1. Preheat grill over high heat for 10 minutes. Divide dough into two equal portions and roll or stretch each into a 10-12” round pizza base. Working with one at a time, place the base on a floured pizza peel or rimless baking sheet.

  2. Using tongs, dip a paper towel in vegetable oil and oil the grates. Slide pizza base off peel or baking sheet and onto grill. Close lid.
  3. Grill for 2-3 minutes, rotating as needed until bottom is evenly browned and bubbles are forming on surface. Remove base from the grill and place it onto the peel or baking sheet with grill-marked side facing up. Close the lid to maintain heat.
  4. Spread half the BBQ sauce on grilled side, then half the mozzarella, turkey and red onion. Brush edge of crust with olive oil. Slide back onto the hot grill (off the peel or baking sheet) and close lid.
  5. Continue cooking for another 2-3 minutes until cheese is melted. Use a large spatula to slide the pizza back onto pizza peel or baking sheet, then transfer to a cutting board to slice. Repeat with the second pizza.
  6. Garnish with fresh basil or cilantro.
