BBQ Turkey Burger Bowl

Ingredients

2 Butterball turkey burgers1 carrot (medium)1 cucumber1 avocado1 yellow bell pepper1 Tbsp of honey1 Tbsp of sriracha1 Tbsp of olive oil1 Tbsp of red wine vinegar½ tsp of sesame oilSalt & pepperSliced halloumi cheese4 cups cooked rice2 cups baby spinach1 tsp sesame seeds for garnish

Directions

  1. Preheat BBQ to 400 degrees. While the BBQ preheats, thinly shave carrots & cucumbers, slice avocado and dice bell pepper.

  2. To make the glaze, mix honey, sriracha, olive oil, vinegar, and sesame oil with a pinch of salt and pepper. Set aside.
  3. Grill turkey burgers over high heat, flipping after 7-9 minutes and repeating on the other side. Cook to an internal temperature of 165˚F/73˚C.
  4. Grill halloumi cheese for 2 minutes on each side until dark and golden. Remove from heat and brush with glaze. Slice burger into six even strips (about ½ inch thickness) and assemble the bowl, with cooked rice as the base and layering with carrots, celery, halloumi cheese, peppers, avocado and baby spinach. Top with sliced turkey burger.
  5. Drizzle with remaining sriracha & honey glaze, and top with sesame seeds. This recipe can be made ahead of time and refrigerated, and can be eaten cold, warm or hot!
