Begin with your Chili Crisp Ketchup. In a pot, combine tomato paste, vinegar, water, chili crisp, sugar, salt, garlic powder, and onion powder. Bring to a gentle boil, then reduce and simmer on low for 5 minutes.
- Remove from heat and allow to cool completely (this can be done the day before and keeps in the fridge for several days).
- When ready to grill, preheat your greased grill over medium high heat. Add burgers (from frozen) and grill for 7-9 minutes. Flip, then spread ketchup on each burger. Grill for another few minutes, then top each burger with a slice of cheese.
- Close the grill, allowing the cheese to melt. Open grill and ensure that the burgers have reached an internal temperature of 165°F (74°C), then remove.
- To assemble burgers, spread mayo on each bun. Add lettuce, a burger, onions, and pickles. Spread some chili crisp ketchup, then close. Repeat until all burgers are assembled and enjoy!
