Ramekin-baked Eggs with Turkey Bacon and Tarragon

6 slices, Butterball turkey bacon4 eggs1 medium tomato, diced1/4 cup whipping cream1/4 bunch tarragon, finely chopped Salt and pepper to taste 


  1. Preheat oven to 375°F degrees. 

  2. Cook turkey bacon as per package instructions. Finely chop 2 slices and set aside (keep remaining slices for serving on the side). 

  3. Divide chopped tomato and turkey bacon amongst 4 ramekins, spooning equal amounts into the bottom of each. 

  4. Top with 1 tablespoon cream in each, then crack an egg into each ramekin.  Season with pinch of salt and pepper. 

  5. Place ramekins in a baking dish (put a small kitchen towel on the bottom to prevent the ramekins from sliding around), then fill with hot water, half-way up in the dish.

  6. Bake for 18-20 minutes, then remove and top with fresh tarragon. Serve as part of a Valentine's breakfast with fresh fruit and toast for dipping!
